I have found that I prefer using my E-bow with my guitar synth more than actual guitar ... for string patches and the like, it's much more natural sounding than pressing the 'Hold' switch or using a MIDI controller to hold the note.

I use it for recording a lot. You can do a track of high 5th or 7th to the key that you're in, and fade it in occasionally on held chords. Great "mock" feedback.
