I picked up a '59n used and it measures 8.1k on my multimeter...that seems quite high, doesn't it? Is that within the normal deviation of these pickups?

Enough of the techy details...how does it SOUND!
Warmer temps will crank up the DCR a bit, but if I recall right, the 59n is +/-7.3k and it would have to be a pretty hot day with no A/C to raise it even 0.5k, never mind the 0.8k from 7.3 to 8.1. My money says it's a 59b.
The good news is . . . there's quite a few folks who love the sound of a 59b in the neck.
I just installed two out of phase unpotted Duncan '59 bridge pickups in my '82 Les Paul a few days ago. IMO, the '59 bridge pickup is a better neck pickup, than the '59 neck pickup.

What about the screw and slug coils orientation?
Sounds like an idea...what do I look for to tell the difference? Do you mean look at which bobbin has screws and which has polepieces relative to the lead? I wasn't sure if all Duncan pickups (neck and bridge) were identical in this respect or not.
IIRC, Blues Saraceno himself said he used 2 59 bridge models in his guitars at one time for the same reason that an older Gibson probably would have had the same pickup in the neck and bridge.
Does it have the logo? If so which coil is it on?
