Are the coils on the Scream'n Demon mis-matched?

I'm getting one coil reading 5.39 (black + white leads) , and the other 5.09 (red + green)

i'm re-assembling this pickup after it was hybridized with a JB

Nope. They aren't mismatched, but it's likely that one coil is slightly off from the other. With the Demon having as high a DCR as it does, differences in coil resistances of less than ~10% aren't out of the ordinary.

10,48 DCR is high?

Well, sure the difference is just 3 % here, so it's normal.

I recall reading that SD pickups are wound with 5 % tolerance. I don't remember where I read that, but it could have been about singlecoils.

The Screamin Demon sounds pretty underwound AFAIC.

Have not measured individual coils on mine; and I won't, because I'm not taking that pickup out (well I might sell the guitar around it, but not the pickup.)
