Bass Pups - Need an explination of tonal changes as they're overwound....

Can anyone explain the changes overwinding a bass pup makes?

I mean, right from a Vintage wind upto something like a 1/4 Pound?

I've thought of trying to swap out the pickups in my 65 Jazz with some hotter pickups. However, that bass is money especially when recording. The line sound is weak and lame, but when it's run through an amp- it's "golden" so to speak. The G&L has a much higher output, and a much different sound to it- especially recorded.
