I Have a Les Paul copy with a single bridge Humbucker and a single volume knob. Looking between the '59 or an Antiquity. What do you guys think? Also I'm using a fender hotrod deluxe amp.

I vote SH-16 hybrid. Stone probably used a slew of LP's in the studio, but this is honestly some of the tastiest humbucker tone I've ever heard. It's got more dynamics than normal buckers and has more range for variety. It has more highs than most buckers and you roll the tone knob back some to make it sound more "traditional". I got mine unpotted as a Shop Floor Custom to get it closer to the Seth tone which I also love then I stuck A2 in it.
If you decide against the hybrid, I vote SH-55 Seth Lover as it has pretty much the same tone as a 59 but slightly more airy (and IMO authentic) without the price tag of the Antiquity. The hybrid has more output than these however and sometimes that helps especially if your amp is not the hottest.
