Can I wire parallel with a 3 wire McCarty P/U

I have some 3 conductor McCarty pickups that I would like to wire for parallel as the split coil option is way too thin.

Is it possible?

No. The third wire is a junction between the two coils. You need to break that junction and reverse one of the coils. You can do it internally if you open it up and switch them around, but then you might as well install 4-conductor if your in there.
