Do they use thicker copper wire for Strat style single coil pickups compare to p90s?

the copper core on the traditional Pickups of strats and P-90 is both AWG42.
But they didn't use the same coating.
P-90 plain enamel.
Strat (the early ones) heavy formvar.
so different material and thickness of the coating, which makes a difference, well at least the thickness of the coating for sure.

No, it's all 42 AWG. That said, both can be wound with "heavy formvar" or plain enamel insulated wire . Heavier insulation obviously makes a same wire gauge a wee bit thicker...

If you want more info on typical pickups recipes, many online pages are at disposal, like this one (with a few mistakes of discussible data but most are right AFAIK): https://www.skguitar.com/SKGS/sk/pickup_specs.htm

EDIT - ToneFiddler, you've been faster than me (I was cooking while writing my answer)... Sorry to repeat what you said. At least we agree. :-)
