Other than the obvious physical differances (knobs vs. sliders) I've never really understood how one differs from the other as far as their functions for tone shaping. Is one better than the other? Would one be better than the other for a guitar amp? Any recommendations? Thanks.

Generally speaking, parametric EQs are superior to graphic. One reason for this is because they are not as noisy. Another reason is because graphic EQ's generally use lesser parts at the critical spot: the fader. 32 world-class faders would make an EXTREMELY expensive EQ! The other reason is because it allows you to treat the problem frequency as a whole, in terms of it's width (Q), instead of addressing just one frequency.
With a graphic EQ, the tendency is to just push the faders into a shape that appeals to the user (like a V or a hill), not knowing anything about the frequencies involved and how they affect one another.

A graphic eq is called that because the position of the knobs gives you a "graphic" representation of your frequency responce.
A parametric eq allows you to adjust the "parameters" of the tone control.
So, in a parametric, you would use one slider to "dial-in" the frequency you want to adjust. Use another slider to determine the degree of boost or cut, and yet a third slider to vary the "width" of the affected frequency range.
A parametric is usually better for solving "problem" spaces, but bear in mind, either style can be built cheap or quality. Generally though, your audio signal goes through fewer parts in a parametric, which should equate to less interference with the original signal.
