I’m using a stock 57 AV2 Strat into a variety of digital devices eg iridium and the bridge pick up gets that harsh spike of digital grunge when playing the d and g strings. What the hell causes this and what’s the best solution? I’m guessing a combination of flat pole profile and stacked humbucker will eliminate what I’m guessing is high frequency overtones?
 
When I hear "harsh spike", "high frequency overtones", and "digital" in the same sentence, the first thing that comes to mind is that you might need to use an EQ to start rolling off some high-end frequencies past 5.5K or so with a full cut by roughly 7.5K or 8K.

I'm not familiar with the Iridium, but if it has input controls, you might need to adjust them, especially if you're driving it with additional pedals in front of it.

Have you tried the same setup with a different guitar to see if it still occurs? From a physical guitar standpoint, perhaps you would benefit from an additional string tree on the D/G strings if it doesn't have one already.
 
The d and g are the middle strings

Your 57 strat likely has a 7.5 radius
You bridge saddles should match the radius of the fretboard

Are the center poles on yu pickups raised?

This could make the poles closer to the strings if the saddle radius is flatter

It sounds like it may just need some setup tweaks

Does the sound change noticeably depending on how hard you hit the strings? Does this occur with analog gear at any point?

There are very few things in a passive circuit that could selectively only occur to digital circuits.
