Do all humbuckers use the start of the screw coil as the hot lead?

If so a push pull switch would ground the slug coils, splitting the outer coils when activated.
I have a Squier Jagmaster with Duncan Design HB103's in it that I had to reverse the hot and ground to get the inner coils when using the push pull spot. I think it did.
Also, is the screw coil always south?

Standard setup is slugs facing in.

Every maker has their own standard with regards to the setup of their pickups. Some of the older ones would have looked at Gibson humbuckers and followed convention there, but newer makers could well have done anything as once the Asian makers got into the fray they could well have done things the opposite.

And thats maybe where the DD bit has made things opposite to Duncan, as Duncan has the slug coil active still during splits.

I call that the inner coils.
Well you didn't here. I just used your terminology to differentiate.

I could have put
Standard setup is screw coils facing out.
