IMO, single coil is clearer. Stacked coil version is, obviously, quieter. Adjustable polepieces are worth their weight in gold. It would be worth the financial stretch to have this feature.
If/when your son wishes to upgrade his acoustic guitar, the adjustable pickup will still be worthy of his next instrument.
