Is it possible to do the 4-way blade B, B+N in parallel, B+N in series, N format (or some variation on the theme) using an EMG 81/85 active humbuckers pair? It doesn't look like I can use the ground/- wire as both a ground for the power distribution, AND a negative leg for series/parallel switching. Am I correct in that?

Yes, you are correct that you cannot connect them in series.
An 89 can be rewired for different sounds but that is another subject altogether.
