my recommendation...buy a real book (or fake book)
Even if you don't know the tunes or read music, you can always go through the book and play the chord progressions to get some crazy cool progressions under your fingers.

that too. most of the charts in there will be a II V I though, just a heads up. its just a really commonly used jazz progression, especially old tunes

Hey man!
Check out my website. I just finished putting up the chord charts to all the chords that I know of. I got them from Joe Pass, Scott Henderson, Eric Johnson and others.

For jazz: check out the Major 7th, Minor 7th and Dominant 7th extensions sections. All those chords are useful, and sound good.
The most typical jazz progression is II - V - I
In which the II is a Minor 7, the V is a dominant 7 or altered, and the I is a major 7th.
Example: Dm7 - G7 - Cmaj7
There is also a Minor II - V - I
In which the II is a Minor 7b5, the V is a dominant 7 or altered, and the I is a minor 7th.
Example: Dm7b5 - G7 - Cm7

Here's a way to take a 12 bar blues and spice it up.
You probably know the standard 12 bar blues goes like this:
| I | IV | I | I |
| IV | IV | I | I |
| V | IV | I | I - V |
and here is a "jazzed-up" 12 bar blues (one of the most popular forms)
play a swing groove (instead of shuffle)
| I | II - V | I | I7 |
| IV | flat V diminished | I | minor VI |
| minor II | V | I - minor VI | minor II - V |
So here are the chords in the key of A 12-bar:
| A7 | Bm7 - E7 | A7 | A7#5#9 |
| D7 | Eb dim | A7 | F#m7 |
| Bm7 | E7 | A7 - F#m7 | Bm7 - E7 |
When I say A7 - you can use any extensions on top of 7: 11, 13, 9th, altered, etc...

if you are serious, the right answer is ted green's chord chemistry and chord progressions books
... if you just want to 'play around' then any old chord book will do as will numerous free websites (google is your friend) ... but learning how 'jazz' chords are built up from a theory-informed p.o.v. will take a bit of study, a lot of listening, and hands-on-the-neck time ...
note, calling them 'jazz' chords is kinda noobish ... theyre all just chords man ... jazz is just a context ...
for starters, you really arent gonna be playin too many barre chords ... so your muscle memory is gonna have to expand ... as for building the finger strength and stretch required to be successful, start doing some exercises not related to any one genre ... just get those fingers good and limber and moving independently

I understand where you are coming from when you don't want to call them "jazz chords". but you gotta admit that you don't play major 7ths or altered tones in many other styles of music. You may play them in pop music, ballads, traditional, classical, BUT jazz is the most prominent style of music to host chord extensions such as those.

i understand that as a popular perception ... honest i do ...
but it is just too limiting and unrealistic ...also, have you looked at john mayer's, O.A.R.'s, or Dave Matthew's chords much? ... those guys arent playing jazz, but those chords can be a BEAST to get around
plus, not even every guy who says the word 'jazz' has the same thing in mind? .. is it charlie christian? les paul? wes montgomery? pat metheny? mike stern? scott henderson? al dimeola? allan holdsworth? steely dan guys? etc etc .. heck, i've even heard some young guns refer to satriani and vai as 'jazz' .... you can learn alot about a lot of differnt ways to approach chords from any / all of these cats ... but they aint all doing the same thing ... so given that the context is so broad as to be meaningless, its best to just stripp it down to what it really is ...
