Middle single coil to pair with neck and bridge

I am trying to get the most tone and sustain out of my Epiphone nighthawk reissue. It came stock with a mini bucker neck, single coil middle, and humbucker bridge. It has coil splitting. I want to put the SM-3B in the neck and the Slant JB Nighthawk in the bridge but, not sure what to put in the middle single coil position. This is a jack-of-all-trades guitar. With the coil splitting there are 9 different tone options. I play a wide range of styles from, gritty blues, old punk, classic rock, metal, rockabilly, etc. Any thoughts?

Welcome to the forum.

Have you bought any of your chosen pickups yet? If not, you might want to reconsider how hot you need the new pickups to be. If you expect the "in between" sounds to be believably "Fender", an SM-1n will be a better choice.
