Need alot of help with pup setup.

Hello,
I am new with any type of advanced pickup wiring.. I want to be able to utilize these pups to their fullest potential. I am looking for some direction. I am confused on what these can do and what I want. I looked at the schematics and I am not sure which to use.
Here is what I have (ordered 2 days ago and waiting).

1 Cool Rail in Neck, 1 Cool Rail in the middle and a Hot Rail in the bridge. I am thinking about ordering this push/pull pot to replace my standard volume pot from Stew Mac http://www.stewmac.com/shop/Electronics,_pickups/Potentiometers_and_push-pull_pots/3/Potentiometers_and_Push-Pull_Pots.html

I for sure want the traditional Strat pup config aswell as something else when I use the switch.. When I use the switch, can I split the three pickups to get more of a traditional strat sound? Another thought I had was to use the bridge and neck pups without the middle...Any ideas on what I can do with what I have or direction would be great. I am looking for anything..any ideas or different ways I can use these. Once I get more knowledge about this I will be able to be more exact. Thank You.

Also, does anyone know about the pot from my link? This may be an elementary question, but I need to know. Do you pull up for on and push back down for off? I am thinking about this pot because I would like to keep the traditional look of a Strat without another visible switch added. Just a personal preference..

Another simple question...Do you use the standard 250k pots with these pups?
