Re: New pickups

59 bridge and Pearly Gates neck would do the trick you want it to do in a mahogany/rosewood setup. For a more hifi sound in the neck, the Jazz is always a good option and for a vintage but thicker/ruder sound overall the WLH set is very nice.

Re: New pickups

The best PAF's Duncan makes are Seth's and WLH's. You won't be disappointed in those. Next, I'd go with A2P's.

'59N's are known for being boomy in LP style guitars, and PGN's are on the warm side, which may or may not be what you want. '59B's are bright and mid-scooped, and PGB's are brighter than some people expect them to be. The three PU's mentioned in the first paragraph don't have these potential issues, whether bridge or neck.
