Next build is going to be a Strat - HH or HSH?

I know its not the same but.... I have a jackson dinky hss. Getting an emg 81 and I plan to just run the single 81 and use blanks in the singles or eventually get an SA for the neck. If I was building a guitar I would either go hh or single hum. The middle gets in the way for me and I don't really use the neck except to mess around with here and there with a solo or scales but I honestly don't know when I should use it or not to.
