Depends on you! And what you like.
I always adjust the poles to match the arch of the fingerboard.
Then I hold down the strings at the highest fret and adjust the overall pickup ht. until the bottems of the two E strings are about 1/8" away from the E string poles of the Jazz neck pickup and about the same or a little closer for the bridge pickup.
Then I listen and experiment. Usually it ends up with the high E side of the pickups a little closer to the string than the low E side.
If I feel I need to start over I just go back to the beginning and hold the strings down at the highest fret and adjust the pickups to about 1/8" away again and start over.
