Anyway, you should probably mention what style, and type of music you like to play, and one of the more knowledgable amonst us will chime in with some recommendations.

Seth Lovers are what came immediately to mind for me too! Your Epi will sound alot like a '58 ES 335 with the Seths. If you wanted a little hotter bridge pickup, maybe a Seth Lover and Custon Custom. But I'd go with a set of the Seths first.
I had a Sheraton II....sold it when I was looking for an acoustic & bought my Guild D-55. I needed the extra cash & it was the low man out.....super sweet guitar though!
Here's a tip if you're gonna swap thing out yourself: Use a "G" string as a fishing line when pulling out/putting in the pots & switch. Just kind of make a loop @ one end to fish things through. Works like a charm!!!
