Going to install a JB and 2 single 59’s but what size pots do you recommend 250 or 500 also capacitor what’s that for do I need it???

JB works great with a 250K pot, just like the lil59's. capacitor: doesn't matter that much to be honest. 0.022 or 0.047 will work fine. the 22 will go less dark and make it a bit more 'honky', the 47 will go really dark. I prefer 22 because the end is more usable (and to get that sweet spot with the 47 is more cumbersome than with the 22).

Use 250 if you want it warm and 500 if you want it bright.

Also, what's a capacitor for, do I need it?

Caps are used for the tone pot. You don't need a tone pot, but if you want to use a tone pot, you need to use a cap for it to work. Caps block lows so when you turn down the tone pot, highs are bled off thru the cap and cancelled to ground but not lows. 22nf is a good medium value cap for guitar but there are other values that work great.
