Can you wire an expression pedal to an effect instead of a knob? I mean, can you wire the pedal to the knob wires and control the feature from the effect pedal?

I agree . . . a knob on an effect pedal is basically just a pot of a certain value. An expression pedal is just a pot that you can control with your foot, so you should be able to do what you want without too much difficulty if you're cannibalizing an old volume pedal.
There'd have to be enough room in the enclosure for an external jack and (at least) a DPDT to switch between foot controlled and the stock knob. It can be done though.
A long time ago, Electro Harmonix (I think) made a pedal for foot-controlling effects parameters. Instead of a pot, it had a short flexible cable that rotated as you moved the pedal. On the end, it had a set-screw fitting that replaced the knob on the pot. Wacky idea, but effective. Good luck finding one these days, though.
If you're going to experiement, get an Ernie Ball volume pedal. They're indestructible, have lots of room inside, and have a fuller sweep that a Dunlop (Vox/Crybaby) box.
I've done this very thing a couple of times. If you have an old Wah enclosure (Like a dunlop wah) it works brilliantly. I also did the other method using a stereo jack. The only limitation with the stereo jack is that, as mentioned above, you can only control knobs that are connected to 2 leads, OR 2 leads and a ground. I modified a tremolo so that I could control the speed of it and it worked perfectly.
