Series parallel wiring for coil split/tap

Hello All: Would love some input on this subject. I am having some new humbuckers (Jazz neck and JB bridge) installed in my Les Paul and I told my guitar tech I would like him to split the coils using push/pull pots. His first question was: Do you want them wired in series parallel? He claimed this would give me single coil sound but with less noise because it is hum-cancelling like a humbucker. I am thinking wow, sounds like a no brainer man. I am also thinking there must be a catch or a down side. Do you sacrifice sparkle and output for less noise with this type of wiring? Is there any reason I would not want my coil splits to be series parallel? Thanks much.

There's no catch.

I think the JB split as a single coil might have a little more volume than in parallel...but parallel is humcancelling and split hums as bad as any other single coil.

The JB gets a great tone in parallel...plus it remains humbucking. Reminds me a bit of a Tele bridge pickup when the JB is in parallel.
