I'm not going to pay the same or more for a One Control Red Raspberry Tart Fart as for a Marvel Drive or a J Rocket 45 Caliber.
At least Exotic has a little lower prices...
I am no expert... but I imagine they can crank out these little surface mount pedals at a fraction of cost.

There are pick and place machines and wave soldering machines for through hole components as well. Unless you actually know the builder, the odds of boards being hand soldered is extremely low. Of course, all pedals are hand assembled, and the more wire connections, the more hand soldering. (Input/output jacks, power jack, LED, footswitch, etc.)

With the One Control Pedals, you are paying for Bjorn’s design and ear.

with electronics smaller usually equals pricier from my experience

I can see reissuing a discontinued pedal in a small package with same features & not lowering the price in comparison to the original, if the original was very sort after. In an ideal world I would wish that the said reissue be cheaper though.

I don't worry about what people or companies charge for things. They can do what they want and I can buy what I want at whatever price I decide it's worth to me. The exception would be if a government or company had a monopoly.
