There have been quite a few threads devoted to this.
There isn't really a "correct" height, as such. If the poles are too close they will cause "magnetic weighting" as they pull on the strings at a focused point. This will cause a false overtone and throw the intonation out.
Too far away and you will get a reduced output as the flux density decreases, but you will also get a more diffuse range of harmonics picked up. Close to the strings you will get a tighter band of harmonics collected and a more intense response. Somewhere betwen the two extremes is the optimum. The actual limits will vary from pickup to pickup, depending the type of magnet and its strength.
