Is there any other pickup that has the same tonal qualities as the jazz, but with a little less output?

Why are you considering to replace the Jazz and not the '59? Could it be '59N in the bridge?

Jazz Bridge and a 59n STILL should not be that different

I can match a PG n with a Custom. Jazz/59 should be no problem.

Because I love the '59...it's everything I was looking for in a humbucker. It's definitely a bridge '59. I love the tone of the Jazz, just trying to figure out the volume difference. I was out of the country on vacation last week, so haven't had much time to fiddle with it. I'll try to get a better handle on the guitar at practice tonight.

Hope you can find solution for that. But if you ever really need to replace Jazz - there's no Jazz N with lower output unless you go with Custom Shop - you might like EJ Custom and you used to be a single coil guy anyway. Goodluck!
