how much would changing to 500k pots affect the sound of my custom custom strat bridge? i like it with 250k, but i'm told that 500k will give me a little more volume and make it very slighty brighter. is this true?

Yes, absolutely. You want 500k with it. The highs are rolled off a plenty in that pickup. Anything less than 500k it just too murky and dark, IMO. If you have singles the guitar with it, hook 250k tones to those and leave the CC without a tone control.

You can also wire it with two volume controls and one tone control - like an Explorer or Flying V - use a 250k tone and volume for the front two single coils and a 500k volume (with no tone control) for the bridge pickup.

I have my strat with the neck and middle sharing a tone pot and the second tone pot for the humbucker, so I can roll off a little more brightness, if necessary.

With an A2, you definitely need to add brightness, so 500K's are a good match. I use 250K's on bridge PU's with A5 magnets, but that's overkill with a CC. Basicially to warm a biridge, use an A2 or 250K pots, but not both, especially with an overwound (hot) PU that has a lot of mids to begin with.

it's got plenty of brightness for me with 250k. i don't like bright pups. in fact, i like the midrangy tone of the cc quite a bit.

it's not that, it's just that i bough 3 500k pots for my new strat. i was just wondering if it's worth spending the money getting some 250k pots or just using the ones i have.

500k won't change it that much IMO - it's just such a fat sounding pup in the treble dept. but I do agree 500k is the way to go.

More importqant is making sure the screws are raised on the treble end, at leats to my ears. that will bring up the volume and bring out the brightness on that pup more than a pot change

make sure you have 500k AND raise the screws!
