What is smart to check when you buy a new guitar?

Only things I know:

1. Look at the neck and the material.
2. Check the tuning and it it has a floyd rose, etc... give it a hard time and then check the tuning again.
3. Play it acousticly.

The difficult part:
1. Hard to check tuning when many of the guitars have old strings not wired correctly on.
2. Hard to know if you like the guitar when it different from what you are used to
3. The guitars action is not propertly set up. Guitars from the fabrics tend to be set up with a bit too high action imo.

Any tips on how to find out if the guitar you are trying is the right one for you?

Make sure the back and headstock doesn't have any marks on it (such as gibson)

Look at it under different lights, check for refinishing. Check used prices to see how fast it will lose value. Listen for noise through a good clean amp. Check for noise when you turn volume or tone knobs.

Exchange policy. If you are shelling out the cash and once you get it home and you don't want it or it is not going to work it would suck to be stuck with it.
