I had just assumed it was the same stuff, but red in color on the newer designs for aesthetics. Now I'm interested to know, is it different for a technical reason?

That's colored Poly-coated wire.

The color most probably correspond to a certain AWG# and/or insulation thickness, made-to-spec to build certain families of p'ups.

For the record, you can have your wire's insulation in any color you want. All you have to do is to order a certain minimum order.

I've read something about a polyxxxxxxx and a polyzzzzzz, two different blends for lack of a better description.

There's just polysol, right?

And then there's plain enamel.

I can't think of any other types of insulation.

There's also formvar. Fender used it in pre CBS pups. There is single and double build. Single just being a single layer of insulation and double being two layers. Other than that, PE and polysol I can't think of any others used in pickups... I've seen polysol in green, red and blue on ebay. The last spool of 42, polysol I bought was red.
