When wiring a 2x12 in parallel the positive goes to the tip and the negative goes to the sleeve, right? Or does it matter?

Technically it doesn't matter, it will sound OK even if you wire it backwards.
But, take a look at standard wiring diagram:
If you have 8 Ohm speaker cabinet (2 speakers of 16 Ohms in parallel) and you want to add one more 8 Ohm cabinet (plug it into OUT jack in the pic) to use it as a monitor, you may be in a problem.
Sound coming from added cab will not be in phase with yours.
So, use standard wiring, as in pic, as you stated
