The best sound I've gotten out of a Strat for a good variety of tones are Fender Custom Shop Texas Specials. For a more Jazz type configuration I have a Strat set up with a Kent Armstong (they are very easy to working with, give them the sound you are looking for and they build you a pickup to match. They are good at it too.) custom bridge, Fender Custom Shop Noiseless middle and a SD SH-2 in the neck.
