Yes, this will work BUT you are adding extra "junk" into the circuit.
I can see the point of having treble and bass controls. Dual treble roll off controls would just put more load onto the pickup.
I suggest keeping the simple MV, MT pot layout and adding a DPDT on-on switch to select between the two capacitors. (A push-pull pot would work equally well.)
