Not true at all, most modern jazz players have full pedalboards. Running an overdrive as a clean/grit boost is super common amongst most of my favourite guitarists, both locally and internationally. RAT pedals have also been common on jazz boards since the 70s with guys like Scofield. When I play trad jazz gigs I generally bring my Walrus Audio Voyager as a grit boost, and more recently my SD Vise Grip as a clean boost. I'm starting to see a couple of local jazz players pick up fuzz pedals now too.
The guitar is not a very responsive instrument, at least not compared to a saxophone or a trumpet. We can't growl into our instrument, or whisper into it to drastically change our tonality. I kind of view the guitar more in the lights of an analog signal, similar to a synth, and my pedalboard comprises of my tonal and voicing options. If I want the sound of growling into a saxophone, I can add a little grit to my guitar with an overdrive etc. Jazz has come a long way from the trad jazz stereotypes and misunderstandings I always see posted on guitar forums.
