Re: best PAF pup
Man, this is a tough one to answer. I've played and owned a lot of fine PAF repros, but it's so hard to qualify what makes a "great PAF."
In no particular order, here are my favorites:
Best All-Around PAF's:
Duncan Antiquity, Seth Lovers or Custom Shop PAF,- super warm, fat and detailed. They even smell like the real thing. Seriously!
Tom Holmes PAF- Honestly, a more complex and refined pickups than any PAF or Pat. #'s I've ever played. Very rich, full and detailed. The treble is sweet and clear, but fat. The complexity of the midrange is incredible. Expensive, but well worth it, if you dig their tone- no one else makes a pickup like this.
WB (Will Boggs,) VTP- Captures a lot of the elusive PAF clarity and magic, especally in the complex midrange, tight bass and clear trebles. Very cool pickups, a future classic for sure.
Peter Florence VooDoos- very nice pickup, big bass, sparkly trebles, and a swirling midrange.
Best Classic Rock, Blues Rock:
Duncan '78- Just a huge sounding, very even pickup. A lot of sweetness, crunch, everything. Great cleans and very dynamic. Awesome tone.
Will Boggs Habaneros- Like his VTP's, but they've got more of everything. More crunch, more bass, sweet mids. Hot and spicy, but still PAF-ish.
Fralin PAF (And RS spec PAFs)- a bit brighter and crunchier than the Antiquities, but with a nice sweetness to the mids.
Bare Knuckles- Stormy Monday's- a bluesier sound, with a very fat and sweet top end. They just beg for some overdrive, but they've got a lot of clarity as well.
Best Clean Sound:
Lollar Imperials- While these sound great with drive, they've got such a detailed, sparkly top end that they also make a killer clean pickup, moreso than almost any other 'bucker. They're incredible for jazz, blues, r&b, country, rockabilly, and can do the hard rock thing as well.
There are two great Tonequest Report articles on PAF's and modern replicas posted for free, legal download here:

Ones that I haven't heard in person, but sound great in recordings are
Shed's (UK) PAFs, Sheptone's PAf Tribute, and Kevin Taylor (Guitar Force) Rebel 1's and Lord of the Blues.
WCR's also sound great, but to my ears, they're a more powerful sound than PAF's, maybe a PAF on steroids kinda tone.
