I know parallel wiring will make for a brighter, spankier sound. I guess I'm having trouble wrapping my head around using a high-output pickup for funk. Or do you mean, use the higher-output pickup in parallel but split it?
You need both coils of 1 humbucker, but instead of wiring in series, you wire in parallel, which produces 1/4th the resistance. So, something like a JB would sound bright and spanky like a Strat pickup.
Back to the PG trail, it parallels to self wonderfully. Crisp, clean I've got the experience with the PG but imagine higher output could also work well when parallel to self.
Or custom order the pickups Duncan made for Nokie Edwards. He's the guy from The Ventures, but that Fender-y surf pluck would be just the ticket for funk.

One of the cool things about funk is that (with a little creativity) you can get most any sound to work. If you're having trouble with your funk sound, it's almost always a matter of timing and phrasing rather than gear.
