Celestion Greenbacks for classic Marshall tone - great mids.
Celestion G12h for more bottom and mellower mids.
Celestion Classic Lead 80 for more of a full spectrum.

Classic Gilmore sounds more midrangy that modern Clapton. Maybe mix/match for the best of both worlds. I don't know how your amp is voiced but all of the above are voiced nicely for a classic Marshall head.
Regarding a cabinet, I'd go for at least 2 12s. Avatar is very popular.
