the 65's are more rounded and have a fuller midrange, less pronounced bottom end, and sweeter and clearer highs. in a combo they can sound great.
the 75's are more punchy low midrange, tighter bottom end, and tighter less open highs but still pronounced highs. in a 4x12 cab playing chug chug they sound great.
and to answer somebody elses question, the 30H's have a tight but less pronounced bottom end, dynamic full mids, softer but still articulate highs. I love these in a 2x12 cab but have never tried them in a 4x12 cab
V30s have a less tight bottom end, tighter more focused midrange and a more pronounced upper midrange and articulate highs. it can be too upper midrange in open backed cabs and a closed back cab will help tighten up the bottom end better. I prefer them in closed back cabs
this is just what ive noticed when playing all these. no right or wrong really, each speaker works well with specific equipment.

if you mixed 65's and 75's together in a 4x12 cab you could still get the tight low focus but also the big rounded midrange tone. I heard 2 celestion cream with 2 75's and it was a big full tone. both complimented each other. if your not playing much tight chunky power chords or chuga chuga type stuff you really may not need the 75's. at that point the 65 will work just fine and even give you a little more extended highs then other celestion speakers. Not Jenson highs or eminance highs but still sweet highs slightly rolled off to avoid the ice picky brightness of other company speakers
