Which of these 2 speakers is a better choice for a real classic rock, 70's rock, 80's metal tone. I've heard good things about both. I wanna put one in my Peavey Vypyr 30.

You can't combine them in a 2x12; they have different efficiencies and the V30 will be louder than the greenback.
The real answer lies first in: what is the wattage of your amplifier?

the last one isnt really what people call a greenback, even though it has a green back.
a 'greenback' is a g12m, the g12h is a much different speaker. good but nothing like a greenback

+1yes i know im gonna sound like a killjoy....but you dont need a new speaker for a great classic rock tone...you need a tube amp.
DOnt waste your money on a speaker like that for the amp you have..modellers are designed to work best with hifi sounding speakers and they get their charachter from the digital algorithms within the amp. Thats how they are so flexible. if you use a coloured speaker like either of the two you mentioned then you will lose a lot of what makes modelling amps useful.

If you have reached the point where you have worked out that you want a better rock tone....then you have reached the point where you need a better rock amp. Once you do that, then tweaking its soud to taste with a speaker swap is worth it.
