Custom(SH-5)/Jazz a good choice for my situation?

I read a lot about this pairing on the forum, and I think it will be a good way to go, but just want to get moral support:

- recently got my first Les Paul, a Custom, and the 498T is quite nasal sounding (I have a 2008 SG that has a 498T that I really like. So something'sjust different with the 498T in my Les Paul...my buddy immediately noticed as well. I played with the PU height, it didn't change. I don't want to dork around with magnets and pots on my own, I just wanna make this as easy and foolproof as possible)

- style/bands includes psychedelic stoner rock, Green Day, smashing pumpkins (their non-fuzz songs), all them witches, jack white, etc...

- the neck pickup is also quite meh. I don't have anything to compare it too...but want something that can range from warm to just a little bit of bite....

The Les Paul has 500k pots. Are they fine? Finally I assume I can keep using my existing pickup covers?

Can't help you with that particular combo as I'm unfamiliar, but:

- yes 500K pots will be fine
- you can order almost all SD humbuckers with covers so you shouldn't need to do any cover swapping
- welcome to the forums :)
 
A 59 set, or a 59 neck/Hybrid bridge is a great choice. A 59 has more bass than a Jazz, but both scoop out the mids, so it really is about how much bass and power you want.
