If you plug straight into a delay pedal with stereo outs, you can send the signal to 2 different amps. Some delay pedals make the sound "bounce" back and forth between the two amps or send the unprocessed sound to one amp and all the repeats to the other amp. And with delay pedals that have stereo ins also, you can plug from the stereo outs of a flanger, for example, and continue the stereo signal after the delay if you choose. For the most part, it's fun to have available, but it's not that big of a deal. I have a bunch of pedals with stereo connections, but I usually run my signal in mono.
