Cant go wrong with the classic boss dd-3. I use one of those and a tape eko from hotone which has 3 different types of delays and the regular Eko from hotone

If you're doing prog you probably really need a good digital delay that has offers presets and midi control. For what the standalone units cost you might as well just unpocket for a G Major II and retire your stompboxes.
The Andromeda Dynamic Digital Delay, or even the Vapor Trail (with maybe another effect in the insert jack) will work well for ambient cleans. I always need at least a long delay (+5 seconds) and a short one for the ambient stuff I do.
Since you have the immerse for your verbs just need a solid delay. For me doing modern Worship I like to keep things simple and want a small footprint on my board so am running a Boss DD7. Reliable versatile and helps that it has the Tap Tempo nutin fancy just gets the job done. Run it with a Digitec Polara on my Boogie board through the loop and get some really nice ambient tones with my set up.
Anything analog with a tap tempo is what I recommend.
You know, I'm working on bringing most of my rig back around to analog effects so I almost agree with you... but delay is an exception. Analog delay is just too limited. If you get a good rackmount digital delay you won't be asking what the best delay is for a specific circumstance because you'll have a delay you can program to do anything you want.
