Traditionally Strats only have one tree. That´s the way the first ones came.
Sometime in the 60s(?), some players added a second tree to the d and G strings for added tension and angle, prmarily to increase sustain on those strings. If you play the same axe with and without the d/g tree, you´ll notice the strings are a bit easier to bend and more "flexible" at the top of the bend when the tree isn´t there. But there is also the advantage with the tree that a sloppy nut slot wont cause buzzing quite as fast. Drawback is more friction because of the new contact point at the new tree.
At some point in time, Fender started doing it themselves. It may also be that Fender started themselves before players did, though, I´m not 100% sure on that.
