I accidently bought the wrong switches to split humbuckers to either coil and i was wondering how i'd use a DPDT on/on/on switch as an SPDT on/off/on? wiring diagram maybe?

Yes. Just use alternate sides of the DPDT on-on-on. In the up position use the top right terminal (that will not be "on" in the middle position) for one input, and in the down position use the bottom left terminals (on the other side of the switch that will not be "on" in the middle position) for the other input. Shunt between the two middle terminals (the ones that are always on) and use this for the output wire.
This will effectively give you on-off-on.

Basically the same as what GuitarDoc said, although his would be easier to wire perhaps.

Would you please tell me what program you used to sketch that schematic? I'd like to find a good program for drafting various wiring schemes nice and neatly.

It's called DIY Layout Builder. I use either that or Visio depending on what I'm doing.
