At the moment (because if you ask me the exact same question tomorrow, my answer will probably be entirely different), it'd be a white MIA Tele with Graph Tech String Saver saddles, an SH-6 (or something else with a lot of character and vocal quality) in the bridge, mother of pearl pickguard, maple fingerboard, Graph Tech nut, and Schaller M6 locking tuners.

I don't need anything too elaborate, I like to keep it simple.

Hmm.. hard to pick just one. Either an orig 59 Les paul. a Black Hamer standard with white binding like what Lita played in the runaways, A Hamer standard with a black quilt top. Or a Custom made Charvel or Jackson

I wanted a Gibson Explorer for a while, especially a custom built one, but now I'm leaning towards a Carvin Semi Hollow.

I'd have to have mine custom built, what I envision would be a smaller hollow-body or chambered body in the shape of an SG, but with neck-thru, a pair of Duncan PU's (59's or something like that), cherry-red finish, normal Gibson style electronics and Grover tuners, and measures taken to prevent the neck-dive that SG's are notorious for. For markers, I'd like abalone grizzly bears at the key fretboard positions and an abalone bear head inlaid on the head stock.

If you mean a guitar model/make/year, then:

A sunburst 1960 Les Paul Standard, a white 1961 SG or a green (either Inverness Green or aged Pelham Blue) 1963 or 1964 SG (either with stoptail), or a 1965 Stratocaster in black with a bound neck and grey bottoms. If I had to choose one, the Strat.

If you mean a specific guitar, then:

Hendrix's 1968 black Stratocaster. I'd even learn to play left handed to keep it as is.

To sastify my 7 string itch, a Jackson Custom Shop Soloist 7 string (just a plain old school body shape Soloist), 2 humbuckers with a Black Winter 7 string set from the Duncan Custom Shop, original Floyd Rose, Mahogany body, Mahogany neck, Quilted Maple top, a properly done dark red/burgundy dye job on the body & neck/headstock with none of that tinted laquer crap, jumbo stainless frets, maple fretboard, white binding on the body, neck & headstock, Abalone Sharkfin fretboard inlays & headstock logo, headstock laminate to match the top on the body.

But then again, I'm jonesing for a Gibson Les Paul too. A Custom in Wine Red & gold hardware would would fit the bill.

Pretty set with the electrics but there is an acoustic!
Goodall traditional Brazilian back and sides Adirondack top ebony board and bridge last time I priced what i wanted it came in around $7K and worth every cent!
Pretty dead on what you see and hear in this video demo but you don't grasp how good they are till you walk in a high end shop pick one up of these then play anything else and they ALL sound stuffed with cotton!! No matter what brand or how much money they are these just nuke them all. I have had that same experience several times and these guitars always floor me!!
