Maybe use shellac and apply it with a brush or a rag as a protective coat? It needs to be something that will sand right off when he sands the grain filler, and that won't cause the dye to not take on the wood. Anything that contains poly might do that. Its amazing the varnishes and finishing oils that contain poly. Even some brands of gun stock oil.
Reversing the order by dying the wood before grain filler might be an option, but then sanding the grain filler may alter the color in ways that might not be wanted.
could you line out your bedroom with plastic sheets and spray in there?
