Do what? Red LEDs conduct when the voltage gets ~0.7V, so what effect would external light have on them?
Light will also induce a voltage on them. It works both ways. I imagine it'd introduce some 60 Hz noise depending on your lighting. Google "LED as light sensor".

Interesting. They have such a narrow bandwidth and generate such a small signal, I wouldn't worry about it, but definitely interesting.
