What's the difference between "Gloss, High-Gloss, VOS, NOS, Satin" and
"French Polish, Nitrocellulose (Nitrocellulose Lacquer), Oil, Polyester (Polyester Resin), Polyurethane, Shellac, Urethane"

NOS is a Fender Custom Shop term meaning new old stock. It describes guitars that receive no Relic work. When buying a Fender CS guitar, you have the option to choose between NOS, Closet Classic, or Relic. Each designation refers to whether or not the guitar is "aged," and how much.

VOS is a Gibson Custom/Art/Historic Shop term meaning vintage original specs. It is a misnomer, as it basically means that they "age" the guitar. It probably ought to stand for vintage old stock or virtual old stock instead. When I hear "vintage original specs," I am thinking that it will be like the guitar on which it's based was when it was brand new, like Fender's NOS. The alternative to "VOS" finish is "gloss" finish.

Gibson's VOS roughy equals Fender's Closet Classic, and Gibson's Gloss equals Fender's NOS.

Those are brand-specific terms. Everything else is more general, and you can find out more with www.google.com.
