Help me choose a set for a guitar build

I'm going to be building a kit of a PRS style semi-hollow guitar. It is mahogany with a maple cap. Two humbuckers.

I have a strat with a Custom Custom in the bridge. I love the tone on that guitar, but it's more or less a one-trick pony. I have a Les Paul Jr style kit that I have a PG in it. I absolutely LOVE that combination. I like playing classic rock, but want to venture to other genres as well. I still want to have a good crunchy sound, but I don't need it to melt any faces.

I'm thinking of:

PG set
JB/59
Saturday Night Special set.

Any other ideas? And don't be afraid to recommend non- SD pickups. I used to use Dimarzio's back in the day (70's - 80's). I haven't tried any recently.
 
i have all those pups and like em all. the pg set is a juicy paf type set, the sns is a little more balanced overall, the 59n is classic and the jb does what it does really well but might not be as versatile as the others for clean tones. if you have a pg then maybe a sns set for something a little different?
