Help me piece together a laptop rig.

So, I haven't played guitar in a year or two, and over that period I've found myself listening to more music than I used to back when I was playing 24/7. I could say that distancing myself from the instrument has been good for my musical appreciation. That said, I've been meaning to get back into it full throttle, so I'm enlisting your help in building a set up that will double as a mini home studio/laptop based jam rig.

At the center of it all, I've got a Fender Strat, a 1x12 cab and a retina 15" MacBook Pro. I need to prioritize which pieces of gear to start adding to it, I guess I oughta start with an interface. How about a Scarlett? Is a 2i2 enough or should I spring for a 6i6 at least? After that, should I go for mics? Or software? Should I be looking at plugins or a POD HD/Eleven Rack/etc for amps? What do you feel is the most beneficial?

Budget wise, I don't mind if things are somewhat expensive, I'd rather slowly build a long lasting rig than going the cheap route and paying in the end. That doesn't mean I'm buying an Axe FX either though.

Basically, my priorities are, in this order:

1) A practice rig for my electric guitar playing.
2) A setup I can record my electric guitar playing with.
3) A setup I can record acoustic guitar and vocals.
4) A setup that I can expand. I'm definitely getting a MIDI keyboard and pads down the line. I'd like to start getting into sampling and making instrumental hip hop music.

tl;dr: Read above list. I already have a good computer. Tell me what to buy.

PreSounus Studio One is a good place to start at a good price. It includes tons of plugins including guitar VST effects.

Personally, I'd just go for a POD or a modelling amp you like (The Mustangs are really good I hear, and the 3+ can go stereo-out to a soundboard via xlr) directly into the audio-in, and record in Garageband or Logic. The ultra-low latency of the Mac units are a huge advantage, plus MIDI accompaniment is pretty plug and play as well. I think Peavey VIP Vyprs will cover most recording gamuts (guitar, bass, acoustic/EQcompressionvoice), but I don't know how their offboard recording software looks like. Fender has a pretty robust system, including a big name multitracker lite that comes packaged. Peavey might have Revalver, which I find excellent.

The Fishman Triple Play is a wireless midi hex pickup for your guitar, and will allow you to trigger soft synths from your Strat.
