If you want a flat finish, definitely use grain filler, the pores will soak up a ton of finish. Tru oil does darken the finish, kinda like a vintage tint lacquer does. the more coats, the darker it gets so that's where the benefit of grain filler comes in.
In the first picture you posted it looks like there's a slight kinda burst, Have you thought about doing a subtle burst? I don't know if you've seen this video but at the beginning he shows how to achieve a burst by using just one colour and sanding.
