I know it seems easy enough, but how do i know what one i can buy? I'd like to "upgrade" the plain looking one on my MIJ Jaguar Special.
I assume you mean string tree??
Never heard of anybody wanting to change a string tree for looks!
Any string tree you can buy will fit just fine...
How to replace a string tree in 12 steps or less:
1) Drive to Guitar Center
2) Go to the accessory/string department
3) Locate the string trees which are usually next to the pots and the left of the 5-way switches
4) Take the string tree to the cash register
5) Pay $3.99 for a pair of cast Allparts string trees that only cost .10 to manufacture
6) Drive home
7) Unscrew the existing string trees
8) Insert the screw into the base of the string tree
9) Insert the screw into the vacated screw hole
10) Insert a phillips screw driver into the head of the screw and turn in a clockwise motion until firm
11) Tune the guitar
12) Play said guitar

the one I have has some sort of spacer under the part that holds the string down.
can i use any of the ones posted?
I clear cut this one from the year of our lord - 1975

Its got lockers - no holes drilled.
You can use any of them...
That spacer is stock on all of the "butterfly" style trees but FWIW, I take 'em off and toss 'em all!!!
I want the tree right on the headstock to get max break over angle...
what tuning pegs are these?? can i see the back??
